Eunice was a devout catholic, her religion was of utmost importance to her. She enjoyed rides to Mother Cabrini's Shrine in Peru. Eunice wanted to be a stay-at-home mom until her children were in school. This was important to her and she accomplished this. She was also a talented seamstress which included knitting, crocheting, needlepoint and quilting. Eventually she became interested in cake decorating as she wanted her children to have a nice birthday cake. In time she had a successful cake business that also included teaching classes at Clinton Community College.
